Meet the Chef

FREDRIC TADD CHAPMAN

Born and raised on Vancouver Island, BC, Canada, Tadd developed a passion for food at a very young age. After years of study and training in Canada, he moved to Mexico at the age of 20 to open his first restaurant, The Tulip Tree. After 25 years in San José del Cabo, Chef Tadd has become a pillar of the local and Mexican culinary scene, often representing Mexico both in Canada and the U.S. Today, Chef Tadd is involved in two iconic culinary projects, Habaneros Restaurant and Baja Luna Farm, where he divides his time. At Habaneros, Tadd has been able to express his style of Mexican fusion with a focus on fresh seafood and mesquite grill.

Mexican Fusion

Located in the historic art district of San José del Cabo, Habaneros is tucked away in the beautiful courtyard behind El Encanto Suites. The restaurant is open daily for lunch and dinner, offering fresh and creative cuisine, innovative cocktails, and live music in the evenings. Don't miss the Sunday brunch, featuring paella, grilled meats, ceviches, eggs, pancakes, and much more.

Habaneros Bistro

Our Story

Originally conceived and opened in the fall of 2004 by Chef Tadd Chapman, when he coined the term and gave birth to Mexican fusion cuisine. Tadd was joined by his mom a couple of years later, and together they developed Habaneros into one of the iconic restaurants in San José del Cabo. In 2020, Tadd and his mom teamed up with good friends Miguel Guerrero and Jenny Urias and moved to downtown San José behind El Encanto Inn. Unfortunately, Miguel passed away in May after succumbing to the pandemic, and we continue in his honor.
